Human Development is an issue which is closely associated with other fundamental aspects of life, such as the health and feeding of the population.
Since 2004, FEDES Foundation and the Chilean Society of Food Hygiene and Microbiology have been researching new and relevant methods for providing human resources training in the area of institutional catering. This joint effort is undertaken within a greater initiative to provide alternatives for a healthy diet for the Chilean population.
The research lead both institutions—with the participation of FOSIS—to create a Production/Training Unit for institutional catering services operators. The alliance with the Chilean Society of Food Hygiene and Microbiology has provided assistance in the technical, operational and sanitary aspects of this infrastructure.
The unit, which is unique in Latin America, has raised the keen interest of companies and public agencies alike. As an example, the National Board of Schooling Aid and Scholarships, know by its Spanish acronym, JUNAEB, which is in charge of the School Food Program, is providing training for its personnel at our unit.
The infrastructural support for the production/training unit has also been used pursuant to the agreement between the Ministry of Health and the Chilean Society of Food Hygiene and Microbiology for providing courses for inspectors of the regional chapters of said Ministry. Hence, the program of Hazard and Critical Control Point Analysis—HACCP—and the second version of auditing conducted by JICA (Japanese International Cooperation Agency), was initiated within the framework of a bilateral agreement with the Ministry of Health. |
